Why Fresh Eggs Don’t Need Refrigeration (But Store-Bought Eggs Do)

If you’ve ever visited a farm or heard from backyard chicken keepers, you might have noticed freshly laid eggs sitting out on the counter instead of in the refrigerator. This might seem strange, especially if you’re used to refrigerating store-bought eggs. So, why is it okay to leave fresh eggs out, and why do older eggs require refrigeration? Let’s crack it open.


The Secret: The Bloom


Freshly laid eggs come with a natural protective coating called the bloom or cuticle. This thin, invisible layer seals the eggshell’s tiny pores, keeping out bacteria and reducing moisture loss. As long as the bloom remains intact, fresh eggs can safely sit at room temperature for up to two weeks without spoiling. This is why in many countries outside the U.S., eggs are sold unrefrigerated.



What Happens to Store-Bought Eggs?


In the United States, commercial eggs are washed to remove dirt and bacteria. While this cleaning process ensures food safety, it also strips away the protective bloom, leaving the eggshell more porous and susceptible to contamination. To prevent bacteria like salmonella from growing, these eggs must be refrigerated immediately and kept cold.


Why Age Matters


Over time, even fresh eggs will start to lose the effectiveness of their bloom, especially if they’ve been handled frequently. The older the egg, the more its natural defenses weaken, increasing the risk of bacterial contamination. Refrigerating older eggs slows down the degradation process and helps them last longer.

• For Freshly Laid Eggs: Keep them unwashed at room temperature for up to two weeks. If you want them to last longer, refrigerate them after that period or after washing.

• For Store-Bought Eggs: Always refrigerate them immediately to prevent spoilage and bacterial growth.
